Risotto con porcini czyli risotto z prawdziwkami

Dziś chciałabym Wam zaproponować obiad na weekend: risotto z prawdziwkami.
Risotto z prawdziwkami jest idealnym daniem do podania na obiad czy kolację w gronie rodziny.
Wspaniałe, kremowe risotto z posmakiem białego wina i pietruszki no i oczywiście prawdziwków, które idealnie pasują do risotta.

Składniki na 4 osoby:
  • 300 g ryżu do risotto (arborio albo carnaroli albo vialone nano)
  • 450 g prawdziwków
  • 1/2 cebuli
  • 1/2 l bulionu domowego
  • 20 g masła
  • 40 g świeżego parmezanu
  • 100 ml białego wytrawnego wina
  • 1 łyżka oliwy
  • sól i pieprz do smaku
  • pietruszka
Przygotowanie:

Robimy wywar z bulion, przez cały czas przygotowania risotta trzymamy wywar na małym ogniu, żeby mieć gorący na podorędziu.
Grzyby myjemy pod bieżącą wodą, osuszamy ręcznikiem i kroimy. Cebulę obieramy i drobno siekamy. W głębokiej patelni rozgrzewamy łyżkę oliwy z oliwek. Wrzucamy cebulę smażymy na średnim ogniu przez 3 minut, aż cebula będzie szklista. Dodajemy grzyby, zalewamy połową wina i smażymy przez około 3 minuty, aż cały płyn wyparuje.



Wsypujemy ryż i bardzo dokładnie mieszamy. Smażymy ryż przez kilka chwil, aż zbieleje, ale nie zacznie się przypiekać,


wlewamy resztę wino i smażymy przez około 1 - 2 minuty aż cały płyn wyparuje. Teraz zaczynamy dolewać gorący wywar z bulionu, po łyżce wazowej na raz, przed każdym dolaniem czekając, aż wywar zostanie wchłonięty przez ryż.


I mieszamy, gotując na wolnym ogniu do momentu gdy ryż wchłonie płyn, wtedy dolewamy kolejną porcję, potem następną, wchłonęło ? No to jeszcze jedną. W ten sposób rozklejamy ryż. I tak do dopóki ryż nie stanie się miękki gdy już jest miękki dodajemy ostatnią porcję i patrzymy czy ją wchłonie, nie powinien całej wchłonąć. Podczas dodawania płynów, powinniśmy cały czas mieszać i gotować ryż na małym ogniu. Potrwa to od 25 nawet do 30 minut. Doprawiamy do smaku solą - mało, bo parmezan też jest słony. Kiedy ryż będzie ugotowany, ale wciąż al dente, zaś konsystencja risotta kremowa, przestajemy dolewać wywar. Zdejmujemy risotto z ognia, dodajemy pietruszkę, masło i świeżo starty parmezan. Mieszamy i podajemy natychmiast.

Risotto with mushrooms porcini

Ingredients for 4 people:
  • 300g risotto rice (arborio or carnaroli or vialone dwarf)
  • 450 g of ceps 
  • half onion 
  • 1/2 L broth home 
  • 20 g of butter 
  • 40 g of fresh parmesan 
  • 100 ml dry white wine 
  • 1 tablespoon olive oil 
  • salt and pepper to taste 
  • parsley
Preparation:

Wash mushrooms under running water. Once the mushrooms are clean, pat dry with a tea towel. Mushrooms cut into pieces. Heat the stock to a simmer in a medium saucepan, then lower the heat so that the stock just stays hot. In a large med saucepan, heat the olive oil add the chopped shallot and fry very slowly for about 5 minutes. When the shallot have softened, add chopped mushrooms. Pour half the wine and fry for about 3 minutes until all the liquid has evaporated. When the liquid has evaporated, add the rice and turn up the heat. The rice will now begin to lightly fry, so keep stirring it. After a minute it will look slightly translucent. Add the wine and keep stirring — it will smell fantastic. Any harsh alcohol flavours will evaporate and leave the rice with a tasty essence.Turn down the heat to a simmer so the rice doesn't cook too quickly on the outside. Keep adding broth, stirring and almost massaging the creamy starch out of the rice, allowing each ladleful to be absorbed before adding the next. In the middle of the cooking add the chanterelles. This will take around 25 minutes. Taste the rice — is it cooked? Carry on adding stock until the rice is soft but with a slight bite. Don't forget to check the seasoning carefully. If you run out of stock before the rice is cooked, add some boiling water. Remove from the heat and add cheese Parmesan. Add the butter and the parsley. Stir well. Place a lid on the pan and allow to sit for 2 minutes. This is the most important part of making the perfect risotto, as this is when it becomes outrageously creamy and oozy like it should be. Eat it as soon as possible, while the risotto retains its beautiful texture. Share the plates. Serve warm.
Note: It's important to stir constantly, especially while the hot stock gets absorbed, to prevent scorching, and add the next ladle as soon as the rice is almost dry.
